Milk Quality
Nigerian Dwarf Goats achieved the Guinness World Record for the highest butterfat content in their milk with an average of 6.1–6.5% butterfat. During lactation this can rise to more than 10%, making it a superior milk for cheesemaking.
Comparison to the average butterfat of common goat breeds:
Nubian: 4.61%,
La Mancha 3.8%,
Alpine: 3.56%,
Saanen: 3.52%,
Toggenburg: 3.38%,
Nigerian Dwarf: 6.1–6.5%
The concentration of protein in goat milk is important because the higher the protein concentration, the higher the cheese yield and firmness of the curd.
Nubian: 3.7%,
La Mancha 3.1%,
Alpine: 2.8%,
Saanen: 2.8%,
Toggenburg: 2.7%,
Nigerian Dwarf: 4.4%
Cheese produced from their milk has a very smooth and silky texture making the Nigerian Dwarf a very popular dairy goat for artisan cheese makers.
